Crunchy potatoes

Start out with 6-8 potatoes and slice them very thin ( I used a mandolin but PLEASE be careful I have cut myself so many times with those contraptions)Soak the potatoes in water for about 10 minutes to over night

Drain out the water

Get a sheet pan cover with non-stick aluminum foil

Start layering your potatoes

keep going every couple of layers sprinkle with salt and pepper

Drizzle with olive oil about 1/4 of a cup and dot with butter 1/2 a stick or 1/4 cup

Bake in a 400 degree oven for 45 minutes to an hour (they should be brown and crispy)

You could add onions or make individual packets (my dads favorite way) by layering potatoes on foil then sealing it up and placing in the oven or on the grill and cook for the same amount of time … they really are a delicious way to make potatoes ( I will post my daddy’s camping potatoes )

Crunchy potatoes

6-8 potatoes thinly slices
1/4 cup olive oil
1/4 cup butter
salt and pepper to taste

Take your thinly sliced potatoes and start layering on a sheet pan lined with non-stick foil sprinkling with salt and pepper as you go.

Drizzle olive oil over potatoes and then dot butter over the top.

Bake at 400 degrees 45 minutes to an hour or until golden brown.
