It has been very busy over at our house so I have been trying to do a little meal prep for lunch at least and so far they have been successful. I thought I would share because the recipes are pretty tasty to us.
First up is Spicy turkey meatballs with Zoodles.
A little tip from me to you when meal prepping one thing try to incorporate at least one of the ingredients in to another meal like zoodles popped up later in my week with Chicken parmesan and if I make riced cauliflower I use half for another meal, rice, quinoa, etc etc. it really does save you time and fewer dishes and I usually place it in a container until I figure what to use it for and if I don’t use it that week I freeze it for another week.
Spicy Turkey Meatballs
- 2 lb of Ground Turkey
- 2 Green onions chopped small
- 1 Tsp of each Salt and Pepper, Onion and Garlic Powder
- 2 Large eggs
- 1 cup Panko Breadcrumbs or Gluten Free Breadcrumbs of your choice
- 2 Tsp or 2 Frozen cubes of Garlic ,Ginger, and Cilantro
- 1/4 Cup of Sriracha sauce, Honey, Hoisin Sauce
- 1 Tsp Sesame Oil
- 2 Tbsp of Balsamic Glaze
- Garnish with Sesame seeds and more green onions to taste
In a large bowl mix all of the ingredients for the meatballs. With an ice cream scoop or your hands form 35-40 meatballs. Place on a 1/2 baking sheet lined with non-stick foil. Bake at 400 Degrees for 20-25 minutes or until browned on the outside and no pink on the inside.
In a large saucepan add all of the ingredients for the sauce, cook for 8-10 minutes on low to cook the garlic and allow the sauce to get sticky. Toss the meatballs in the sauce and serve with whatever you choose Zoodles, Rice, Quinoa.
